Muriel Desmecht has been the manager of Café de la Brasserie, located right next to the brewery, since November 2005.
It’s a sizeable place, with seating for 33 in the main dining room and space for another 11 diners in the bar. They enjoy an experience that showcases the best of Belgium, including, of course, Silly beers. A changing menu features specials, traditional home cooking, and local specialities like Flemish carbonades (a beer and beef stew), stoemp (rich, creamy mashed potatoes), and endives au gratin. The whelks (“sea snails” or wulken in Dutch) are cooked to Muriel’s own family recipe.
A visit to the Café de la Brasserie is the perfect end to a tour of the brewery, and Muriel – herself a beer connoisseur – is well placed to advise her guests in their choice of Silly beer. A tasting board of four small glasses of beer from the tap to helps drinkers to make their pick – it’s a locally unique service. And Muriel has big plans for the café, including a new covered terrace.
A welcoming smile and plenty of expertise in choosing and serving her beers makes Muriel a model café host. And on Muriel’s side of the bargain, working with Brasserie de Silly means a great team on her doorstep and on her side, always offering quick, effective service to their managers.
