Seasonal leeks with smoked ham
Special recipe for the Silly Saison

40cl Saison de Silly
4 leeks (or 8 small, young leeks)
4 slices of smoked ham
2 tablespoons of cornflour
5 cl milk
1 egg yolk
3 tablespoons of cream
100 g grated Emmental cheese
8 small potatoes
½ box of garden cress
salt, pepper and nutmeg
1 / Cut the leeks in half and rinse under running water. Place the leeks in a frying pan and add the beer, salt and pepper. Bring to the boil, then simmer at medium heat, semi-covered, for 15 minutes.
2 / Drain the vegetables and wrap each piece of leek in a slice of smoked ham. Arrange in an oven dish.
3 / Dissolve the cornflour into the milk and add this mixture to the cooking juices, stirring and allowing the mix to thicken. Mix the egg yolk in with the cream and add to the sauce while stirring. Add a pinch of nutmeg and half of the grated cheese.
4 / Pour the sauce over the leek and ham rolls and sprinkle with the remaining Emmental. Crisp the top under the grill.
5 / Serve with boiled potatoes garnished with garden cress.
